Delicious Oven-Fried Cod

Ingredients

1 1/2 lbs. cod
1 egg, beaten (or use egg
3/4 c. dry flavored bread crumbs
Flavor salt (optional)
Liquid butter or 2 tbsp. melted butter

Preparation

Preheat oven to 400 degrees. Cut fish into serving size pieces. Beat egg and lemon juice together. Dip fillets into egg mixture, then into bread crumbs and coat well. Place fillets in low sided baking dish. Sprinkle each fillet with some flavor salt, black pepper, garlic powder, and Parmesan cheese. Drizzle with as much butter as desired. Sweet 'N Crispy Cod: Cut cod into pieces. Dip fillets into 1/2 cup French dressing, then into 1/2 cup corn flake crumbs. Place in low sided baking dish. Top each fillet with a teaspoon chopped green onion, flavor salt, and garlic powder. Bake in preheated 400 degree oven for 15-20 minutes or until fish flakes when tested with fork. May also be broiled.

Cod has always been a favorite of seafood lovers. It's so versatile, mild, and economical. The newest member of the cod family is Alaskan cod which is totally boneless, skinless, and terrific prepared any number of ways.

This boneless cod comes from the crystal clear waters of the Bering Sea and has a beautiful fresh, clean taste. Because it is such a firm, flaky fish, it may be grilled outdoors after brushing with butter. It also makes a wonderful base for chowder. As with all fish, don't overcook or you will loose some of the lovely soft texture that makes this fish so desirable. Measure the thickest part and allow 10 minutes for each inch of thickness. Because some of the fish tapers, you might want to tuck thinner ends under.
