Matzoh Brie
About
This is a traditional Jewish dish, usually served during Passover, but delicious any time of the year. It is essentially the matzoh (unleavened bread) version of French Toast. One great thing about this recipe is that is is very flexible. Adjust the egg/matzoh ratio to taste. Cook a short time for soft, plump pieces, or cook a longer time for crunchier pieces.
My favorate way of eating is with grape jelly, but others like a little bit of cinnamon sugar, apple jelly, or strawberry preserves.
I got this recipe from my father, who probably got it from his mother.
