Fried Cauliflower Bites
Ingredients
1/2 head of cauliflower, cut florets into thin slices
Olive oil (for frying)
1 cup bread crumb (I use whole wheat)
1/4 cup Parmesan cheese
fresh parsley sprigs (chopped)
salt & pepper (to taste)
1/4 tsp red pepper flakes
3 eggs
Marinara Sauce:
1 can tomatoes in juice
2 cloves garlic, minced
1 tbl olive oil
red pepper flakes (if you like a "kick")
fresh basil
salt & pepper
Preparation

Prepare marinara sauce (see below).

Cut the cauliflower.

Slowly heat a small amount of oil in a skillet over medium heat.

Mix breadcrumb, Parmesan cheese, parsley, salt, pepper and red pepper and place on a large plate.

Mix egg in a separate bowl.

Dip cauliflower in eggs then roll in breadcrumb.

Gently place cauliflower in hot oil. Cook slowly to insure the cauliflower will cook through. Do not cook on high heat because this will cause the cauliflower to crisp on the outside but it will remain uncooked on the inside.

Turn cauliflower when one side is golden brown. Cook until all cauliflower are golden on both sides.

Place cooked cauliflower on a plate with paper towels to absorb oil.

Marinara Sauce:

Pulse the undrained tomatoes in a food processor a few times until mostly broken down.

Heat 1 tablespoon of the oil with the garlic and pepper flakes in a medium saucepan over medium heat until just sizzling.

Add the tomatoes and simmer for about 10 minutes until the marinara thickens slightly and the flavors develop.

Add 2 tablespoons of the fresh basil, season with salt and pepper if needed. Cook for 1/2 hour more.
