Simple Tomato Soup
Ingredients
1 tbsp oil
2 onions
3 garlic cloves
2 can chopped tomatoes, 800 g
2 + ½ cups water (600 ml)
1 tbsp dried basil
1 tbsp tomato purée
salt & pepper, to taste
Preparation

Chop the onions and garlic into small pieces and fry them on high heat in large pot for a few minutes. Stir in it frequently to prevent them from burning.

Meanwhile half the tomatoes. Once the onions are golden brown, add the tomatoes, water, tomato purée, thyme, salt & pepper.

Bring to boil before turning the heat down to low-medium. Allow to simmer for 15 minutes.

Blend the soup until it is completely smooth.

Season to taste with salt and pepper.

A simple, yet delicious and warming tomato soup. It only requires a few stable ingredients, 2 minutes of prep and 15 minutes on the stove.
