Chocolate Guinness cookies are sandwiched between Bailey's marshmallow creme and dipped into a chocolate whiskey glaze. Instead of the traditional circular cookies, cut them into shamrocks and tint the Bailey's creme green for a more festive look. These moon pies are the perfect dessert to serve up at your St. Patty's day party.
Ingredients
Chocolate Guiness Cookies:
24 oz guinness
1/2 cup brown sugar
6 cups AP flour
1 1/3 cup unsweetened cocoa powder
1 tsp salt
1 tsp baking powder
2 cups unsalted butter, softened
3 cups sugar
2 large eggs
Bailey's Marshmallow Creme:
2 egg whites
pinch of cream of tartar
pinch of salt
2/3 cup light corn syrup
2 tsp vanilla extract
1/4 cup Bailey's Irish Creme
2 1/2 cups confectioner's sugar
Chocolate Whiskey Glaze:
12 oz semisweet chocolate
1/4 cup vegetable oil
2 tbsp whiskey
