Swiss Omelette

Preparation

Preheat the grill and add 10g of grated Gruyere to the egg mixture. Have ready another 10g of grated GruyZere mixed with 1 tablespoon of double cream. After folding and turning out the omelette spoon this mixture over the folded omelette and flash it under the hot grill to form a cheesy creamy glaze.
