Summer Sausage

Ingredients
2 lbs. lean ground beef
2 tablespoons Morten's tenderquick salt
1 tablespoon liquid smoke
1 teaspoon mustard seed
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup water
1 teaspoon dehydrated garlic
1 teaspoon crushed chili pepper
Preparation

Mix all ingredients, roll into 2 rolls, wrap each roll in foil and refrigerate 24 hours. Keep the foil as smooth as possible with no creases or wrinkles. This keeps your mixture together and not fall apart. Punch holes in foil after refrigeration and place rolls on cookie sheet. Bake at 350 degrees for 1 hour. Cool and remove old foil and rewrap. Serve and enjoy.
