In a roasting pan, fat side up, place it, uncovered, in a preheated 375 degree oven for 1 hour and 15 minutes. Turn off oven and let the roast stand for 5 hours in oven. DO NOT OPEN THE OVEN DOOR at this time.

Forty-five minutes before serving time, add pepper to roast and return it to a 300 degree oven until serving time. Since the oven is tied up for a long period of time, serve accompaniments that can be made on the stove top.Glazedcarrots and wild rice go well with the roast.
