Ingredients
500 grams
chillies
, red
2
onions
, medium
125 grams
ginger
, crushed
125 grams
garlic
, crushed

lemons
cup
sugar
(caster)
1 cup
white vinegar
Preparation

Wash
and
cut
stalks from chillies,
cut
away any bruised or marked parts, do not remove
seeds
.

Peel
and
chop
onions.

Grate
zest
and
squeeze
juice
from lemons.

Blend
or process chillies, onion, ginger, garlic, rind, sugar, lemon and vinegar until smooth.

Place in a saucepan and
simmer
over low
heat
for 20 minutes. Pour into sterilised jars and
seal
.

Makes about 4 cups.

Will keep in fridge for 6 months.
