Crockpot Vichyssoise

Ingredients

5 mediums potatoes sliced
4 leeks, white and light green sliced
1 lrg onion chopped
2 cups milk
teaspoon salt
Chopped chives fresh or frozen

Preparation

Combine all ingredients except milk, cream and chives in crock. Cook on HIGH for 3 hours.

Puree mixture in blender or food mill and return to cooker. Add milk and cream, stir well. Heat to boiling for about 1 hour on HIGH.

Chill and serve with chives.

Note: If chilled soup is too thick for your taste, add milk or cream. Recipe may be doubled for a 6-quart crock.
