Honey Chicken Stir Fry

Ingredients

1 pound boned chicken breasts
1/2 cup apple juice
1 tablespoon honey
1 tablespoon Dijon style mustard
2 teaspoons cornstarch
1 (10 oz.) pkg. frozen Chinese style stir fry 1 tablespoon cooking oil
3 green onions, sliced

Preparation

Cut chicken into 1 inch pieces. For sauce stir together apple juice, honey, mustard and cornstarch, plus the packet from the vegetable package. Set sauce mixture aside.

Preheat wok and oil, stir fry vegetables and onions for 3-4 minutes. Remove. Add 1/2 chicken pieces. Cook 3 minutes until no pink shows. Add remaining chicken, push from center and add sauce to center. Cook and stir for 2 minutes. Return vegetables to wok and cook to coat.
