Grilled Whole Chicken

Ingredients

1 whole chicken (approx 4 lbs)
1 lemon, quartered
3 fresh bay leaves
1 handful fresh sage (other herbs will work as well, rosemary
salt

Preparation

Remove giblets and wash chicken.

Heavily salt cavity. Stuff cavity with herbs and lemon

Salt and pepper the skin of the chicken, rub with olive oil.

Prepare grill for cooking with indirect heat. For charcoal, place charcoal on one side of the grill and light. For propane, light burner on one side of the grill.

When grill is hot, add a handful of soaked wood chips (optional, apple wood is preferred)

Put chicken on cool side of grill, breast side down. Cook, covered, for 20 min.

Flip chicken and cook covered until juices run clear (about 30 more min).

Remove chicken from heat and let cool for about 10 min.

About

Add soaked wood chips to the heat source to make a smokey flavor (apple wood works well). However, use wood chips sparingly, the smoke flavor shouldn't overwhelm the other flavors.
