Technique: Chiffonade Cutting

A chiffonade is a technique of cutting leaves, such as spinach, basil, mint, lettuce, into thin strips To do so, you remove the stems from the leaves and make a stack. Then, roll them tightly together like a cigar and sliced into fine shreds. This is a great technique for creating a bed of greens or a garnish.
