Guava Caribbean Lobster

Ingredients

2 tablespoons olive oil
2 tablespoons chopped shallots
1 tablespoon chopped garlic
2 cups Guava juice
1/2 cup Spiced Rum
1/2 gallon heavy cream

Preparation

Heat a saute pan add oil, and shallots, red onion, garlic. Saute till translucent. Add Spiced Rum plus Guava reduce by half. Add cream reduce by half. Strain sauce. Serve over Caribbean 1/2ed lobster on a bed of Chef choice pasta.
