Maytag Blue

Maytag Blue was the first commercially produced American blue cheese and is, to this day, the most widely available fine American blue. The company that makes it is owned by members of the same Iowa family that founded the Maytag appliance company.
Maytag blue is soft and slightly crumbly, with a medium blue flavor. It pairs well with figs and other fruits.
In the 1930s, scientists at Iowa State University developed a new technique for producing blue cheese from homogenized milk. Several years later, the Maytag cheese company was created to use these techniques commerically. The result is a very consistent product with an even distribution of blue mold.
