Turkey liver is part of the giblets found inside the turkey. The giblets also include the heart, gizzard, and other visceral organs that usually come in a "bag" inside the cavity of a packaged whole bird.
Turkey liver is bright red and very soft. It is often broken into two parts. It should be cooked fresh, because as most organ meats go, they can go bad easily.
It can be used to make turkey gravy, sauteed in butter and paprika, or pureed to make liver pate.
