Physical Description
The original "Cyprus new potato" High yields of large tubers that are long and Waxy with a mild flavor. A good all rounder with some slug resistance. The Spunta is pretty medium sized and pale yellow in color. A yellow fleshed potato that is a good all rounder and good for potato salads.

Selecting and Buying

Choosing: Check for firmness, watch for bruising, as it means that it is ruined. Also watch for any sprouting from the potato. fuck the rest
Buying: Look for at local farmers' markets, as grocery stores rarely sell these.
Preparation and Use
You can use spunta potatoes in all sorts of recipes. You can roast, bake, boil, fry or mash the potatoes. Try roasting potatoes with your favorite meat or mash them up into a great mashed potato side dish. You can slice them up any way you want and deep fry them to create potato chips or fries!
Cleaning: Clean the potato by scrubbing the outside. The inside of the potato does not need to be cleaned. If you are getting rid of the potato skin, no cleaning is involved.
Conserving and Storing
Storage leftover potatoes under refrigeration. No containers are needed.

The history of the potato provides a grim warning of the need to maintain genetic diversity in our staple food crops. In the 19th century, Ireland was heavily reliant on only a few varieties of potato, and those types contained no resistance to the devastating disease known as late blight. When late blight destroyed the 1845-1846 potato crop, widespread famine followed. An estimated one million people starved to death and more than a million were forced to migrate abroad.
