Pokkali Rice

About

An extra-large grain variety of rice that is cultivated organically from June to November in Southern India when the water salinity levels are low. When high, prawn farming takes over. The prawn seedlings swim in from the sea after rice harvest and feed on the leftovers of the rice crop. The rice crop, in turn, needs no other fertilization as it draws nutrients from the prawns' excrement. Pokkali rice is famous for its peculiar taste and high protein content. Farmers claim that the rice has numerous medicinal qualities.
