Carnaroli

About
Carnaroli is a medium-grained rice from northern Italy, specifically native to Novara and Vercelli. It is traditionally used for making risotto. It differs from arborio rice, the more common rice for making risotto, in that it has a longer grain, and both a higher starch content and higher quantities of amylose, the later allowing the grains to keep their shape better during cooking.
