Spinach - Filled Crepes

Ingredients
cup butter
cup unsifted all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon dry mustard
2 1/2 cups milk
1 1/2 cups (6 oz.) sharp cheddar cheese grated
2 (10 oz.) pkgs. frozen chopped spinach, thawed
6 tablespoons butter
1/2 pound mushrooms, washed, coarsely chopped
1 whole mushroom, sliced
1 tablespoon chopped parsley
