Herbed Yogurt Spread

Ingredients

1/2 cup low-fat yogurt
1 garlic clove minced
1 tablespoon chopped fresh oregano
teaspoon (or ¾ dried oregano)
1 teaspoon chopped fresh mint
2 teaspoons lemon juice
1/4 teaspoon freshly-ground black pepper

Preparation

Whisk together all ingredients; chill until ready to serve or up to 8 hours.

This recipe yields about 1/2 cup.

Sounds very easy and delicious.

I love herbed yogurt with roast dinners (roast chicken, steaks, roasted potatoes), pita and fresh herbs, or with any number of Indian curries. You can substitute any herbs of your choice - dill, chives, and other green leafy herbs are great additions as are a pinch of paprika, cayene, and white pepper.
