Corn and Zucchini Salad

Ingredients

Ingredients:
2 ears fresh corn
2 cups zucchini, diced
1/4 cup green onions, chopped
1/4 cup red bell peppers, chopped

Preparation

Husk the corn and steam it for five or so minutes in an inch or two of boiling salted water, turning once or twice. (This is quicker and easier than a full boil and just as effective)

Combine ingredients and mix together. Refrigerate until ready to serve.

Done! It was light, summery, and flavorful. And very easy to make for someone who is trying to come up with something good in a hurry!

It is also beautiful and uses some of my summer bounty! I made my dressing, though, with some fresh herbs and a balsamic/oil vinaigrette.
