Authentic Huevos Rancheros

Ingredients

Preparation

Heat oil in a skillet and fry the tortillas lightly on both sides, but not until crisp.

Drain them on paper towels and keep warm.

In the same oil, fry the eggs, then place two eggs on two tortillas.

Cover the eggs with the warmed salsa and serve immediately
.

This is a simple and popular way of preparing eggs both in and outside of Mexico as a breakfast dish. Another common sauce used is salsa verde, a green tomatillo salsa. It is sometimes served with refried beans.
