No Bake Oreo Chocolate Chip Bars
Ingredients:
1 package original Oreos or other sandwich cookie, broken in half
1 10 oz. package large marshmallows
3 tbsp unsalted butter
1 tsp pure vanilla extract
1/4 cup semisweet chocolate chips
1/4 cup white chocolate chips
Directions:
Step 1: In a food processor, grind the broken cookies until they are crumbs. You will have to do this in batches. Set aside. Line an 8X8 baking dish with parchment or wax paper so that one piece lays horizontally and another lays vertically creating a cross-like shape.
Step 2: In a microwave safe bowl, melt the marshmallows with the butter. Add the vanilla and stir until ingredients are well combined.
Step 3: Add the cookie crumbs to the melted marshmallows and mix again. Pour the mixture into the baking dish and top with both white and semi-sweet chocolate chips. You may need to press the chocolate chips slightly into the bars so that they settle within the bars. Allow the bars to set for at least 10 minutes before cutting and serving.
