Beautiful Rose Tart For Mother's Day

This year, after you allow Mom to sleep in as long as she absolutely can manage, why not make this beautiful rose apple tart to show her how much you care?

What I love about this recipe other than the taste, is that it's easy enough for the little chefs to make. My husband can make a mean pan of fried eggs, but anything other than that is sketchy in the kitchen. This rose apple tart is simple to make. The younger kids can mix the tart ingredients, while the older kids roll the apple strips carefully into roses. I hear them all trying to figure out who does what, as I am allowed to rest for as long as I want.

I'm wondering why 364 days of the year I have to get up early, and that one day I get the chance to sleep as long as possible, all that interests me is listening to my family try to make me something that signifies my important place in their world.

Rose Apple Tart

For the dough:
1 1/4 Cup flour
1 Tbsp sugar
8 Tbsp butter
1/4 tsp salt
3 Tbsp ice cold water
For the filling:
4 apples
1/4 Cup brown sugar
1/4 Cup brown sugar
4 Tbsp butter
3 Tbsp lemon juice
 
Preparation
 
1 Add flour, sugar, butter and salt in a kitchen mixer and let it work for 1 minute.
2 With the mixer still working (at low speed) add three tablespoon of ice cold water and let it work up until a crumbly dough will be formed.
3 Transfer the dough on a flat surface and finish working it with your hands up until it will compact together.
4 Cover the dough with some plastic paper or parchment paper and let it rest in the fridge for 1 hour.
5 Divide the cold and firm dough in 4 parts and with the help of some parchment paper and a rolling pin I create 4 small circles 1/4 inch thick.
6 Place the pastry dough circles in mini tart pans, trimming the edges where needed.
