The Ultimate Comfort Food: Chicken Pot Pie Soup

A comfort food can invoke sweet childhood memories, or pleasant times that made us feel loved. Everyone has their own list of comfort foods and we at Foodista are no different. From satisfying stews to home baked goods, the scent of these tasty dishes just make us feel all warm and fuzzy. 

On our farm, chicken pot pie seems to be the most requested dish in the deep winter months. It's a great one to have in my recipe files, because when someone is not feeling well, comforting them means I don't have hours to spend in the kitchen. Today's recipe for Chicken Pot Pie Soup is perfect. It's the home cooked, comfort dish we love, and is easy enough to make when things at home become hectic. Topped with homemade biscuits instead of a crust, making this into a soup is genius! The best part of a good pot pie is the rich gravy, right? Well, this one has double the gravy to eat with those tasty biscuits. You will never miss the pie crust. Delicious! 

Chicken Pot Pie Soup

1½ pounds red potatoes, washed and dried, chopped into one-and-a-half inch cubes with skin left on
5 carrots, diced
3 celery sticks, diced
1 large yellow onion, diced
2 cloves minced garlic
1 cup frozen green peas, defrosted
3 uncooked chicken breasts, cut into one-and-a-half inch cubes and seasoned with salt & pepper
½ cup almond milk
8 cups chicken stock, homemade if possible
¾ cups white wine or vermouth
2-3 tablespoons olive oil
½ cup flour
1-2 teaspoons salt & pepper
5-6 sage leaves finely chopped
2 tablespoons thyme finely chopped
Frozen puff pastry shells
