Parents, myself included, get stuck in the school lunch rut. We run on auto-pilot, churning out peanut butter and jelly and bologna and cheese sandwiches like a well-oiled machine. Before the kiddos go back, try finding some new recipes to keep them interested in their homemade brown bag meals. This veggie sandwich is a perfect example of how you can change up the lunchtime routine. Not only is this sandwich healthy, but its full of a variety of flavors and textures. Vegetable Sandwich
Ingredients:
Multi-grain bread
English cucumber, thinly sliced
Heirloom tomatoes, sliced
Avocado, sliced
Baby Spinach
Sliced cheese (like mozzarella, cheddar or Colby jack)
Fresh dill, finely chopped
Whipped cream cheese
Hummus
kosher salt and freshly grated pepper
Directions:
Step 1: Mix the fresh dill with the whipped cream cheese and spread it on one side of the bread. Spread the other slice of bread with the hummus.
Step 2: On the hummus side, add a few slices of avocado and then layer tomatoes on top. Season the tomatoes with salt and pepper.
Step 3: On the cream cheese side, layer the cucumber slices and sliced cheese. Add a few baby spinach leaves and sandwich the two pieces of bread together.
