It's Bluesday Tuesday (#BluesdayTuesday) and we're celebrating our love of blue cheese with these scrumptious bison burgers created by Chef Michael Symon. We love bison because it's full of flavor yet contains half the calories and a fraction of the fat as beef. So you can get your red meat fix without the guilt! Top your burgers with Castello's handy blue cheese slices (yes, their blue cheese comes in slices!!) - perfect for grilling - and peppery arugula. These burgers are a must for your weekend barbecue!
Michael Symon's Blue Cheese Bison Burgers

Makes 4 burgers
Kosher salt
Freshly ground black pepper
2 T olive oil
1 pound ground Bison, loosely packed into burger patties
4 ounces Castello burger blue cheese
1 small red onion, sliced thinly into rings
1 cup arugula
4 soft brioche style buns, toasted
Heat grill to medium high heat. Season burgers with salt and pepper on both sides, drizzle with olive oil then place on grill.
Cook for 3 minutes then flip. Add the blue cheese, about 1 ounce per burger, and let cook for another 1 to 2 minutes.
Remove burgers from the grill and place on toasted buns.
Top with a slice of red onion and arugula.
