The peas are peeking out of the garden, making us giddy with early spring harvest delight. It's always such a rush to see that they are actually growing, when it was frighteningly cold as they were planted. Now, we are hopeful for a great garden season, and a long list of tasty ways to enjoy our bounty.
If you have never had fresh spring peas, do try to get some. They are bright, sweet, and plump; perfect as a side dish or to perk up any recipe. We love them plain with a bit of mint, or as little pops of color and taste in our spring recipes. Check these out!
