Mother's Day Brunch: Paleo Friendly Coconut Flour Pancakes

If you do not know what to prepare your health conscious mom for breakfast, try these amazing coconut flour pancakes.  Not only are these delicious but they are also gluten-free, dairy-free, and paleo.  You can whip these up by hand or with a hand mixer in minutes.  Just like with traditional pancakes, these coconut flour ones are best served with maple syrup.  I like to add chopped toasted nuts and fresh fruits as well.  Sweeteners are a controversial subject in terms of the Paleo diet, Grade B maple syrup, molasses, raw honey and coconut sap are acceptable in moderation and still contain a small amount of vitamins and minerals.  Obviously, if you are watching your weight or have strict dietary restrictions this breakfast would be considered a treat.

Ingredients:

3 Tablespoons coconut flour
3 Tablespoons coconut milk
3 Tablespoons coconut oil-melted
3 eggs
1/4 teaspoon sea salt
1/4 teaspoon baking powder
2 to 3 drops liquid stevia
