Fast Chicken Enchilada Soup

If you find yourself addicted to chicken soups of any kind, this lightning fast chicken enchilada soup is a must-make. The soup only takes 15 minutes to make and requires no special ingredients.  Enchilada sauce is combined with cream of mushroom soup, and milk to form the base of the soup.  Black beans, corn, and tomatoes are added for texture.  The recipe uses canned chicken but I recommend using leftover chicken or picking up a rotisserie chicken from the market.

Quick and Easy Maple Dijon Chicken

Maple Dijon chicken is a sweet and savory dish that's perfect for the changing of the seasons.  Sauteed chicken breasts are paired with a maple sauce flavored with piquant Dijon mustard, spicy red pepper flakes and chicken broth.  You can serve this meal with mashed parsnips and roasted broccolini or roasted rosemary potatoes and a simple side salad.

Homemade chicken pot pie is a luxury that most of us cannot prepare on a weekly basis.  These mini chicken pot pies are the shortcut version of this classic comfort food.  A quick and easy creamy chicken sauce is made with chicken stock and cheddar cheese.  Diced onion, peas, carrots and cubes of chicken are mixed in before it's poured into a muffin tin with the biscuit dough.  After just 30 minutes of baking, dinner is served.

Fried chicken is the quintessential picnic food that is a a guaranteed crowd pleaser This baked version cuts down on calories while still providing that crispy crust that everyone loves. The trick to creating a crust on both sides of the chicken is to preheat the oven with a cookie sheet inside. That way when you are ready to put the chicken in the oven, there will already be a heated surface to crisp the bottom side of the chicken.
