Easy Mini Cadbury Egg Chocolate Bark

Mini Cadbury eggs have various uses during this time of year.  They are a staple in Easter baskets as well as Easter treats.  This easy chocolate bark recipe makes use of this seasonal candy in the best way possible.  Melted white and dark chocolate are topped with chopped mini Cadbury eggs to create a whole new candy.  Feel free to add other fun toppings like sweetened shredded coconut and chopped almonds.

Easy Mini Cadbury Egg Chocolate Bark

Ingredients:

1 pound good quality white chocolate, chopped
1/2 pound good quality bittersweet chocolate, chopped
1/2 pound good quality semisweet chocolate, chopped
6 ounces Cadbury Mini Eggs, chopped

Directions:

Step 1: Line a baking sheet with parchment paper.

Step 2: In a double boiler or heat proof bowl over a sauce pan with 1" of simmering water, melt the white chocolate, stirring occasionally.  It is very important that the water does not touch the bottom of the bowl as this can cause overheating and scorch the chocolate. 

Step 3: Pour the melted chocolate into a prepared pan and spread evenly using a spatula. Chill for at least an hour or until set.

Step 4: Repeat Step 2 with bittersweet and semi-sweet chocolate.  Slowly melt the chocolate until both have combined to form one cohesive, glossy mixture.  Remove the tray of white chocolate from the fridge and let stand for 5 minutes. Pour melted dark chocolate over white chocolate layer, spreading the dark chocolate layer evenly over the white chocolate layer.  Sprinkle with chopped Cadbury eggs and chill for another hour or until completely set.

Step 5: Break the bark up into bite sized pieces and serve with other Easter candy.

*Note: If you prefer "marbled" bark, you can swirl the two melted chocolates together using a toothpick.
