Head down South and you’re likely to find pimento cheese on many hors d’oeuvres tables. Affectionately called “the caviar of the South,” this inexpensive cheesy spread typically includes cheese (processed or Cheddar), mayonnaise, and pimentos, though the addition of cream cheese, various hot sauces, and seasonings such as paprika or cayenne pepper can also be found in regional variations. Serve it as a spread on crackers or celery, in crustless tea sandwiches, or rolled up in white bread and cut into pinwheels. It's an easy and adaptable recipe that everyone will enjoy!
