The holidays are a busy time for everyone. Whether you are spending your time shopping, attending parties, or making gifts, preparing dinner for the family is not at the top of your to do list. Slow cooker meatloaf is a stress-free way to get a home cooked meal on the table. Aside from mixing the ground beef with the egg, milk and seasonings, you will hardly have to lift a finger. The meatloaf is shaped and then set to cook for 3 to 4 hours in the crockpot. This recipe gives you the time and the freedom to accomplish other things and when you are ready to eat, your dinner will be waiting for you. After 4 hours, your meatloaf will be juicy and tender. You can serve the classic meatloaf side dishes including mashed potatoes and a vegetable. I like to combine the two and make a baked potato that is stuffed with broccoli and topped with a rich cheese sauce and chives.
Slow Cooker Meatloaf

Ingredients:
1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup
Directions:
Step 1: Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
Step 2: In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
Step 3: Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meat loaf from slow cooker to serving platter. Cut into pieces to serve.
