Hey my name is Joe Rieke. I’m one of the chefs here at the Ballard Annex Oyster house in old Ballard. Today we are talking about how to clean mussels. You want to give it a good scrub, with a little scrubby pad. The next thing you want to do is grab the beard that is attached to the mussel. And pull out, up, with one quick movement. So you are going to go out, and up to remove the beard. And that is how you clean a mussel.
