Strawberry Rum Shortcake

Not all seasonal eating has to be just for the family. This Strawberry Rum Shortcake is the big brother to the traditional recipe that Grandma used to serve. All the same bits are there; rich poundcake, sweet and juicy strawberries, light and fluffy whipped cream/ with one exception. This dessert also boasts a hefty shot of strawberry rum. Mom and Dad take notice. All those summer vacation days ahead means that you deserve a bowlful of this delightful dessert.

3 sticks of butter (not margarine)
1 lb. of powdered sugar (sifted)
6 eggs
8 oz. sour cream
1lb. of flour measured in sugar box - 3 1/2 cups (sifted)
2 tbsp. vanilla, lemon, or almond flavoring
Topping - This is prepared by the slice so the amount depends on personal preference and how many people you are serving.
Fresh Strawberries
Sugar To Taste (optional - berries vary from year to year. If they're really sweet you many not need any but if you want the syrupy nectar to drizzle over the top you'll need to mix in some sugar as that draws out the natural fruit juice)
1 to 2 oz strawberry rum
Light whipped creme, Cool whip (French Vanilla flavor is super yummy) vanilla or strawberry ice cream (whichever you prefer)
