I am always looking for way to reinvent the classic chicken tender. Cookie Monster Cooking has a delicious recipe for tortilla crusted chicken tenders that you have to give a try. Blue corn tortilla chips are crushed to create the crust which gives the tenders a great crunch. It is served with a fresh mango salsa and a chipotle dipping sauce.
