Artichoke season is a short one. Take advantage of this spring vegetable and make these delightful roasted garlic parmesan artichokes. Finely chopped garlic is combined with parmesan cheese and parsley before being mixed with breadcrumbs. The flavors penetrate each leaf and the top becomes golden brown and delicious.
5 cloves garlic – chopped fine
½ cup grated Parmesan cheese or Romano cheese
½ cup Italian Parsley – chopped fine
½ tsp. red pepper flakes
2 cups Italian style bread crumbs
3 – 4 tablespoons olive oil
