Nothing says 'Spring' quite like a nice salad. And the combination of savory chicken and creamy blue cheese in the recipe below makes for one awesome salad.
Ingredients:
CHICKEN
1 cup nonfat Greek yogurt (see Tips)
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
2 tablespoons finely chopped fresh tarragon or 1 tablespoon dried
1 pound boneless, skinless chicken breast, trimmed
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
