One of our favorite Fair foods is a good ole classic corn dog slathered in ketchup and mustard. What's not to love about golden crusty corn bread wrapped around a juicy, all-beef hot dog? They may not be the healthiest food to eat, but every once in a while we love to splurge!
These adorable mini corn dog muffins satisfy that Fair Food craving, yet don't have all the deep-fried fat! This baked version from JIFFY are a bite size treat the whole family will love. They're excellent as a snack for kids and adults and make a perfect appetizer for game day parties. We love to use flavorful chicken sausages (like smoked or Cajun-style) or just plain turkey franks if you want to keep the calories down.
Mini Corn Dog Muffins
2 packages JIFFY Corn Muffin Mix
2 eggs
2/3 cup milk
4 hot dogs - all beef, chicken or turkey
Preheat oven to 400°F.
Grease muffin pan or use paper baking cups.
Prepare muffin mix as directed on package.
Cut each hot dog into three equal pieces (or about the height of your muffin tin).
Fill the muffin cups 1/2 full and place one section of hot dog, standing upright, in the center. Gently pour equal amounts of remaining batter into each muffin cup.
Bake 13 – 15 minutes or until golden brown.
