Balsamic blueberry grilled cheese from Amanda K. by the Bay is filled with flavors from the Pacific Northwest. Two thick pieces of white bread are slathered with balsamic blueberry compote and then stuffed with spinach and cheese. Since this grilled cheese leans towards the sweeter side, I suggest using a sharper flavored cheese like goat cheese or cheddar to balance the sandwich.
