Chocolate alfajores are a melt-in-your mouth cookie. This Argentinean staple combines a buttery shortbread cookie with sweet and sticky dulce de leche, a Latin American caramel sauce made from sweetened condensed milk. This recipe stays slightly from the traditional one. Instead of a vanilla butter cookie, these are chocolate. To make these alfajores extra special, dip them in dark chocolate.
Chocolate Alfajores
Recipe from Anything au Chocolat
1 cup cornstarch
1 1/3 cup flour
1/2 cup sugar
1 stick and 3 tbs unsalted butter (room temperature)
3 egg yolks (room temperature)
5 tbs semi-sweet chocolate morsels - melted (70 g)
1 tsp vanilla extract
2 cans Nestle dulce de leche
diced walnuts
