Tasty Borough Market Cheddar Chive Popovers

November 28, 2013

Popovers are a versatile and tasty addition to any meal. Serve them with soups or with breakfast or brunch. The sharp flavors of a good Cheddar cheese make these savory treats just what we're craving. Pop them in your mouth while they're still hot as they lose their lusciousness as they cool.

1 tablespoon expeller-pressed canola oil
2 large eggs
3/4 cup whole milk
1 tablespoon unsalted butter, melted and cooled
1/4 teaspoon fine sea salt
pinch cayenne pepper
1 cup minus 2 tablespoons flour
3/4 cup grated Borough Market Cheddar, divided
1/4 cup chopped fresh chives
Preheat oven to 425°F. Grease 8 cups of a 12-muffin tin with the oil, using a paper towel to make sure the bottom and sides are thoroughly coated. Place the tin in the oven to get very hot while you make the batter.

In a large bowl, whisk together eggs, milk, butter, salt and cayenne, whisking for 1 minute. Slowly whisk in flour. Switch to a spoon and stir in 1/2 cup of the Cheddar. Stir in the chives.

Spoon the mixture into the hot muffin tin, filling each cup a little more than half full. Sprinkle the tops with the remaining 1/4 cup Cheddar.

Bake for 15 minutes, then (without opening the oven door) reduce the oven temperature to 350°F and continue to bake until the popovers are puffed up and deeply browned, about 15 more minutes. (If you need to open the oven door to check the popovers, open it only an inch or two as a draft could cause them to deflate.)

Run a knife around the edges of the muffin cups to release the popovers and serve hot.
