Weekend Brunch: Decadent Blueberry-Stuffed French Toast

Got a wide-open Saturday to spend in the kitchen with your family? You should totally make this blueberry-stuffed french toast recipe from Eat, Play, Love. It's chock-full of fresh blueberries, buttery pecans, rich mascarpone cheese and a dash of bright lemon that plays off the other sweet elements. Kids will love to roll up their sleeves and help stuff and plop these french toast rolls on the griddle!

Blueberry Stuffed French Toast

Ingredients:
Stuffing
5-6 oz. mascarpone cheese
Zest of 1 lemon
3-4 Tbsp. confectioners sugar
1/4 - 1/3 cup Maine blueberries

French toast
6 slices of thick white bread, or rolls with tops cut off
4-6 eggs
1/2 cup milk
1 tsp. vanilla
1/4 - 1/2 tsp. freshly grated nutmeg

Nut topping
2-3 T butter
1/2 cup pecans
1/4 cup brown sugar
Cinnamon to taste

Blueberry sauce
1 1/2 - 2 cups Maine blueberries
1 Tbsp. plus 1/2 Tbsp. sugar, divided
Juice from 1/2 lemon
Fresh whipped cream with lemon zest
