You probably have an overwhelming pile of green tomatoes on hand at this late point in the season, but perhaps you're not too excited about frying them again. Try a surprisingly delicious variation in this green tomato pesto recipe from Coseppi Kitchen. It's ready in minutes with just a quick puree in the blender, and it's just as versatile as regular basil pesto.
Ingredients:
2 medium green tomatoes, quartered
1/2 cup fresh basil, packed
1 clove of garlic
1/2 sweet onion
2 tablespoons olive oil
Salt to taste
