Apple Cinnamon Coffee Cake

Apple cinnamon coffee cake from Red Pen Recipes highlight fall flavors.  This particular coffee cake has two layers of fresh apples, one in the middle of the cake and one on the top.  Also, the fat typically used in quick breads is replaced with applesauce to keep the cake moist while emphasizing the apple flavor.  Enjoy this breakfast treat with a cup of coffee or hot apple cider.

5 Granny Smith apples, peeled and sliced
1/3 cup granulated sugar
1 tablespoon of cinnamon
3 cups all-purpose flour
2 cups granulated sugar
3 teaspoons baking powder
2 teaspoons vanilla
4 eggs
1/4 teaspoon salt
1/2 cup orange juice
1/2 cup apple sauce
1/2 cup vegetable oil
