      A ripe summer tomato is truly a wonderful thing. Often times, it is just enough to eat it as an apple with a sprinkling of sea salt. This tomato sandwich celebrates this summer fruit simply and deliciously.
Tomato Sandwich
Ingredients:
	1 large beefsteak tomato
	2 slices of multi-grain bread
	1/4 cup ricotta cheese
	salt and pepper
	olive oil
Directions:
Toast the bread to your liking. Spread the ricotta cheese on both sides of the bread. Slice the tomato into ¼ inch slices. Layer the tomatoes on top of the bread, sprinkle with salt and pepper and drizzle with olive oil.
