Heavenly Smoked Mackerel

This is a simple way to preserve fresh fish. We are using it with Mackerel, since that is what's available locally. It's great fun for the boys to go catch them all morning, and then hand them over to Mom. Try this recipe with any fish you like. 

Heavenly Smoked Mackerel

1/2 gallon water

1/2 cup canning salt

1/4 tsp powdered ginger

1/2 cup brown sugar

1 bay leaf

Combine all ingredients, stirring until sugar and salt are dissolved.
