Old School Seafood Cocktail Sauce

Whether you are doing a seafood boil or just happen to love a good shrimp cocktail, every cook should know how to whip together a quick and easy cocktail sauce.

Cocktail Sauce

Ingredients:

1/2 small onion, chopped
1/2 teaspoon chopped olives
1/2 cup horseradish, squeezed dry
1 1/2 cups ketchup
Tabasco sauce, to taste
1 teaspoon lemon juice
1 tablespoon cider vinegar
1 tablespoon red wine vinegar
Salt, to taste
1 pinch sugar
Directions:
 
Put onions, olives, and horseradish into a small food processor.
 
Blend until a nice paste forms.
 
Transfer to a bowl and mix in ketchup, Worcestershire, Tabasco, lemon juice, cider vinegar, red wine vinegar, salt and sugar.
 
Stir until smooth.
 
Put sauce into ramekins and serve with oysters on the half shell.
 
Yield is 2 1/4 cups.
