Summer Eating: Grilled Greek Chicken Gyros

Instead of settling for grilled hot dogs and burgers, try this recipe for delicious Greek grilled chicken gyros.  Chicken breasts are marinated in a lemony vinaigrette studded with garlic and oregano.  The grilled chicken slices are nestled into a warm pita with feta cheese, tomatoes, cucumbers, and olives.  Serve this Greek inspired meal with hummus, stuffed grape leaves, and more pita bread.

Grilled Chicken Gyro

Ingredients:

2 tablespoons lemon juice
1/2 cup Olive Oil
3 tablespoons Red Wine Vinegar
1 tablespoon dried oregano
2 cloves of garlic minced
1 large head of Romaine lettuce rough chopped
1/4 cup chopped fresh parsley (or one TBS dried)
10 or more pitted kalamata olives (optional)
 
Directions:
 
Slice the raw chicken breasts lengthwise into 4 thin strips each.
 
Place in dish and sprinkle with salt and pepper.
 
In a small bowl whisk together lemon juice, olive oil, vinegar, oregano and garlic.
 
Pour half the dressing over the chicken and turn it to coat well.
 
Grill the chicken about 4 minutes on each side.
 
Combine the vegetables, parsley and cheese in a large bowl.
 
Mix with remaining dressing.
 
Grill the pita bread until golden brown and crispy.
 
Place 1-2 strips of chicken in a pita, top with salad mixture, drizzle with tzatziki and hummus and fold in half.
